Bamboo shoots are commonly used in Anhui cuisine. The shoots grown on Mount Wenzheng of Huangshan City are said to be the tenderest of them all. The sausages and black mushrooms are added to enhance the flavor of the dish because the Mount Wenzheng shoots do not possess a strong flavor.
